Vegetable Pot


Being one of the most popular dishes I do not understand why I found recipes that had the aspect of a mash on the internet instead of sautéed vegetables mostly whole or in reasonably large pieces. And as I have never insisted searching, I said to do it after my head actually I could see the result of a perfect vegetable pot in mind and I managed to do exactly as I was thinking.

Ingredients
Yellow bean pods 200 g
300 g cauliflower
Zucchini 1 piece
Pepper 2 pieces
Eggplant 1 piece
Carrot 1 piece
White onion 2 pieces
Potatoes 3 pieces
Tomato paste 2 tablespoons of the sauce I put my magic for food
200 ml sunflower oil
1 teaspoon salt
0.25 teaspoon black pepper – salt and pepper put to taste

Getting Started

1. Because not all vegetables are heat processed in the same way and at the same time, we have grouped as in steps and see how we prepared for the pot.

2. Zucchini, eggplant and peppers are washed, cleaned and cut in good sized pieces. Carrots, potatoes and onions are wash then cut separately.

3. Boil beans in salted water for 3 minutes.

4. And immediately remove them to a bowl of cold water (to stop the cooking process, to be al dente vegetables).

5. Just boil the cauliflower, 3 minutes and remove to a bowl of cold water.

6. Heat oil in a pan and fry the zucchini at hot fire. When they are ready, that is when they are lightly browned, remove them in a dish, but do not remove the whole oil, they can leave in pan.

7. Reuse the oil for the red pepper (paprika) until slightly browned and remove them from the oil.
Repeat procedure with the eggplant.

8. Mix these roasted vegetables and pt them aside in a deeper bowl so that you can easily mix them into the pot at the end.

9. And we have some more work to do and we’re ready.
Sliced carrots are roasted in another pan with little oil.

10. In about 5 minutes add onion Julian – stir and let them about 10 minutes to brown.

11. Add tomato paste, stir, leave 2 minutes then remove from heat.

12. And now the final moment – all the vegetable mix.
The zucchini, eggplant and peppers add beans and cauliflower (out of water).

13. Then add diced potatoes.

14. And last series of vegetables: carrots and onion mixture.
Put some salt (the rest of salty after removing from oven pot), pepper. Mix well all vegetables, but careful not to make porridge.

15. Move around the composition in a deep oven tray.

16. Put aluminum foil over and place pan in oven preheated to 200 degrees for 1 hour.
After this time, try the potatoes if they are ready, if not – leave it more as needed.

17. It is delicious booth hot and cold, as food or as a garnish.
