Pie made as at the mom house

My mother made these home pies in her wood oven; they were fluffy, soft and very tasty and had a slight smell of butter. One day when I remembered about those days I said to myself that I have to reproduce the recipe on the website as well; the pie dough you can make easily at home and use a quick pastry recipe. I gave the example of some pie fillings, below, in the recipe steps. Quantities we have given to each type of filling for 20 pies are about – if you want to make sure fewer pies, lower quantities.

I used 1 piece of home made pastry – quick recipe for each dough filling
Potatoes 1 kg
300 g cow cheese
White onion 4 pieces
Cottage cheese 1 kg
3 egg pieces
White cabbage 1 kg
100 ml sunflower oil

Getting Started

1. Prepare the pastry dough according to the home made pastry – quick recipe. Loosen the dough rolls and sprinkle tem well with flour.

2. Cut pieces of the rolls, about 1.5 cm thick, flatten them with the roller trough some flour until they get about 2 mm thick.

3. Now about the filling: This is the cabbage filling: roast the chopped cabbage together with an onion until the cabbage softens and all water dissipates. Then add salt and pepper to match your taste, allow it to cool and then it will be ready to put into pies.

4. Potato filling: Boil a few potatoes in their skin, about 40 minutes, then cool them with cold water and peel them; then you will have to smash them well with the mixer and let them cool. It is important to smash them as they are hot! Then add shredded cottage cheese, together with 2 pieces of onion that are roasted in advance in oil and add all in there. Add salt and pepper to match your taste and mix well.

5. Cheese filling: Mix cottage cheese 3 eggs, chopped white or green onions and salt. Cheese filling for pies should be slightly salty, thermal processing will lose their salt will be as good as they should be.

6. Now you will see how the pies will take shape by placing the stuffing in the middle of the dough.

9. Then stick all the corners together with some additional dough.

10. Once the pies are formed smash them easily and pace them in an oven tray, greased with oil or covered with baking paper. You should not leave much space between them.

11. Put them in the oven at medium heat until they are well browned.

12. Then remove them to a plate and let them cool slightly. Usually cabbage pies taste better cooler, but the cheese and the hot potato pies should be warm when served.
