Gazpacho soup


I’m sure that for many of you staying in the kitchen is unbearable especially now on this heat, you’d just want to eat fruits and vegetables. In one of the past days while I was troubled by the thought of having to cook quickly to not turn on the oven I remembered the recipe of this refreshing summer soup.

A very aromatic soup, tasty and quick soup the traditional Spanish soup Gazpacho, does not lose its quality in our country either. Prepare the vegetables by adding some spared spices and you will surely have a beautiful and tasty meal.

Ingredients
Tomatoes 3 pieces or 4 small tomatoes
Pepper 1 pc
Cucumber 1 pc
A white onion 1 piece or 1 smaller half of a large onion
4 pieces of garlic 4 cloves of garlic
Lemon juice from half of lemon or vinegar
1 teaspoon salt or according to taste
3 tablespoons of olive oil
Buy bread croutons or make them at home, see below how
Bread (baguette) 50 g about a quarter of the bread, but I would say it is optional

Getting Started

1.The quarter of bread will be softened in a bit of water.

2. Wash clean all the vegetables.

3. Put all the vegetables in a blender (cut them at an average size) and blend them with the softened bread, the olive oil and salt.

4. Squeeze half the lemon juice in the blender and keep mixing.
You can put vinegar instead of lemon but I still prefer the lemon.

5. Blend well the composition, but stop from time to time to taste the composition for salt and if you feel it’s not enough you can add more.

6. Then strain the soup through a sieve; it will be smoother and softer.
It is recommended to leave the soup in the refrigerator for at least 1 hour if you have the time – but still is good.

7. Meanwhile prepare the croutons, you will need bread, cut it in small cubes, sprinkle them with olive oil, salt and a little oregano. Put them in the oven and let them dry a little to serve them aside the soup.

8. After staying in the refrigerator use a ladle and pour it into plates.

9. Place the croutons immediately before serving, because they soften quickly.

If you do not like croutons you can just put thin slices of sweet paprika, which works perfectly in soup, by combining all tastes perfectly.
